3 c Water
1 1/2 c Dry white wine
1 lg Onion, coarsely chopped
1 sm Carrot, coarsely chopped
1 sm Celery stalk (with leaves), coarsely chopped
1 cl Garlic, crushed
Giblets and neck from turkey, coarsely chopped
Salt and fresh ground pepper
Pan juices from roast turkey
1/2 c Water
1/2 c Madeira
1 tb To 2 Tb flour

Ingredients to make Man Sized Omelet with Salsa
4 lg Eggs
2 tb Water
1 tb Unsalted butter
3 Slices of lean bacon, cooked, crumbled
1 sm Avocado, preferably California, peeled, diced
1/2 c Coarsely grated Monterey Jack (about 2 oz)
SALSA:
2/3 c Tomato Finely chopped seeded
2 tb Finely chopped red onion
1 Pickled or fresh jalapeno pepper, seeded, minced**
2 tb Minced fresh coriander (cilantro)
1 tb Fresh lime or lemon juice
** It is recommended you wear rubber gloves while handling the jalapeno pepper, or be sur to wash hands thoroughly, when done handling pepper, before touching anything else.

| Frozen Fruit Fantasy - This decadent fruit recipe, just may be the most versatile one we have! Sweet, healthy fruit, tart fruit juice, and creamy, yogurt are combined to create this fruit fantasy, that is perfect for so many things. Have it for a healthy snack, or give it to the kids for breakfast.

Ingredients to make Frozen Fruit Fantasy
1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt
**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.
***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.
