3 Acorn Squash
2 Apples, chopped
1/2 c Chopped Walnuts
1 T Grated Orange Peel
1/2 c Brown Sugar
2 T Margarine, melted

Directions to make Fruit and Nut Filled Squash

Step 1:Preheat oven to 350 deg F. Cut squash in half lengthwise and scrape out seeds. Place cut side down in baking dish and bake for 25 minutes.
Step 2:Mix the other ingredients. Turn squash cut side up, fill with apple mix and continue baking for 20 minutes, or until squash is tender.

Ingredients to make Frozen Fruit Fantasy

1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt

**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.

***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.

Directions to make Frozen Fruit Fantasy

Step 1:Soften gelatin in cold water for 2-3 minutes. Combine gelatin, lemon juice, fruit puree, grated rind or seasoning, fruit juice concentrate and yogurt and mix thoroughly. Freeze until crystals begin to form around the edges.
Step 2:About 30 minutes before serving, remove from freezer to refrigerator to allow dessert to soften. Scoop into stemmed dessert dishes for a festive presentation.

Ingredients to make Saucy Salsa Chicken and Rice

1/2 c Onions, thinnly sliced
1 Garlic clove, minced
1 tb Margarine or butter
1 c Medium salsa
1/2 ts Sugar
1/4 ts Cinnamon
1/8 ts Cloves, ground
1/2 Bay leaf
4 Chicken breast halves, boneless
2 ts Cornstarch
8 oz Tomato sauce
1 sm Orange, peeled,sections
Cooked Rice

Directions to make Saucy Salsa Chicken and Rice

Step 1:In a large skillet, over medium heat, cook onion and garlic in margarine until tender. Stir in salsa, sugar, cinnamon, cloves, and bay leaf; add chicken. Cover and simmer for 30 minutes.
Step 2:Remove chicken to heated platter; keep warm. In a small bowl, dissolve cornstarch in tomato sauce; stire into skillet. Cook, stirring constantly until the mix thickens and begins to boil.
Step 3:Add orange sections; heat through. Discard bay leaf. Serve chicken over rice with the sauce over all.
