The steaks are grilled, then thinly sliced, before being added to healthy salad greens, and it’s very own salad dressing recipe included. Authentic Thai Shrimp -This simple, savory, recipe for thai shrimp stir fry, is yet another of our “Less Than 30 Minute Meals”, and a very authentic tasting one. We really made this one stand out by adding some sweet to the thai, for an innovative, yet easy recipe. As with most stir fry’s we suggest serving over rice, or even pasta, if you prefer, either way it is spectacular!

Ingredients to make Authentic Thai Shrimp
1 tablespoon peanut or vegetable oil
1 lb uncooked deveined peeled medium shrimp, thawed if frozen, tail shells removed
1 cup sliced red onion
1 to 2 teaspoons green or red Thai curry paste
1 can (14.5 oz) organic diced or fire roasted diced tomatoes, drained
1 tablespoon lime juice
2 teaspoons packed brown sugar
1/2 cup coconut milk (not cream of coconut)
1/4 cup chopped fresh Thai basil or basil leaves

Man Sized Omelet with Salsa - This very flexible, jumbo egg omelet has an abundance of “extra’s” added to it, creating a real “flavor fiesta” for your tastebuds! Feel free to add or substistute any of the ingredients for your family’s favorite combinations, and as it is so robust and well rounded, you can enjoy it for breakfast, lunch or even dinner!

Ingredients to make Man Sized Omelet with Salsa
4 lg Eggs
2 tb Water
1 tb Unsalted butter
3 Slices of lean bacon, cooked, crumbled
1 sm Avocado, preferably California, peeled, diced
1/2 c Coarsely grated Monterey Jack (about 2 oz)
SALSA:
2/3 c Tomato Finely chopped seeded
2 tb Finely chopped red onion
1 Pickled or fresh jalapeno pepper, seeded, minced**
2 tb Minced fresh coriander (cilantro)
1 tb Fresh lime or lemon juice
** It is recommended you wear rubber gloves while handling the jalapeno pepper, or be sur to wash hands thoroughly, when done handling pepper, before touching anything else.

1 cup sun-dried tomatoes, not oil packed
1 1/2 pounds beef stew meat
12 new potatoes, approx 1 1/2 pounds
1 medium onion, in 8 wedges
