1 Red bell pepper, roasted, peeled, seeded
2 Egg yolks
1 tb White wine vinegar
1 Lemon, juiced
1 1/2 ts Capers
6 Garlic cloves
8 Anchovy fillets
1 1/2 ts Cayenne pepper
1 c Salad oil

Directions to make Fiery Mayonnaise Sauce

Step 1:In a blender place the roasted red bell pepper, egg yolks, white wine vinegar, lemon juice, capers, garlic, anchovy fillets, and cayenne pepper. Blend the ingredients together so that they are smooth. With the blender still running, slowly dribble in the salad oil so that a mayonnaise is formed. Correct the seasoning with the salt (and more lemon juice) if necessary.

1/4 c Flour
1 ts Cinnamon

TOPPING:
1/3 c Flour
1/3 c Brown sugar
2 tb Margarine, softened
1/2 c Slivered almonds

Directions to make Apple Cinnamon Pizza

Step 1:Place bread dough on greased 12 inch deep dish pizza pan. When thawed completely, pat dough on bottom and 1/2 inch up sides of pan. Let rest 15 minutes.
Step 2:Combine cream cheese, 1/4 cup sugar, egg and vanilla until smooth. Spread over bottom of crust. Combine apples, 2/3 cup sugar, 1/4 cup flour and cinnamon. Arrange evenly over cream cheese mixture.
Step 3:In a small mixing bowl, combine 1/3 cup flour and brown sugar. Cut in margarine until mixture is crumbly. Add almonds. Sprinkle evenly over apples. Bake at 350F for about 40 minutes, or until golden brown. Serve warm or cold, with whipping cream, whipped topping or ice cream.

Ingredients to make Baked Apple Alaska

5 Apples, cored and thinly sliced
3 tb Sugar
2 ts Cornstarch
1/2 ts Cinnamon
pn Salt
1/8 ts Cream of tartar
1/4 c Confectioners sugar
3 Eggs (whites)
1 qt Vanilla ice milk or ice cream

Directions to make Baked Apple Alaska

Step 1:Arrange sliced apples in a 9inch pie plate. Combine sugar, cornstarch, cinnamon and salt. Sprinkle evenly over apples. Cover with aluminum foil. Bake in a 425 degree oven 30 minutes or until apples are just tender. Remove from oven, cool and refrigerate.
Step 2:At serving time, cover chilled apples with an even layer of ice milk or ice cream and place in freezer. Beat egg whites and cream of tartar until frothy. Gradulaly add 10x confectioners sugar, a Tablespoon at a time. Continue beating until mixture stands in peaks.
Step 3:Spread meringue over ice milk being sure to bring it to the edge of the pie plate. Place pie plate in a roasting pan surrounded with ice cubes to keep cool. Bake in a very hot oven, 500 degrees for 3 minutes or until meringue is lightly browned. Serve immediately.

Frozen Fruit Fantasy

  Frozen Fruit Fantasy - This decadent fruit recipe, just may be the most versatile one we have! Sweet, healthy fruit, tart fruit juice, and creamy, yogurt are combined to create this fruit fantasy, that is perfect for so many things. Have it for a healthy snack, or give it to the kids for breakfast.

Ingredients to make Frozen Fruit Fantasy

1 tb Unflavored gelatin
2 tb Water, cold
1 tb Lemon juice
1 c Unsweetened frozen raspberries, pureed, OR your favorite berry)
1 t Lemon rind, or orange rind
2 tb Frozen apple juice concentrate
2 c Plain lowfat yogurt

**Vary the fruit juice and fruit puree combinations to develop your own creative desserts according to the seasons. It takes almost two cups of fruit to make one cup of puree. Bananas can be mashed with a fork; other fruits do better in a blender.

***If desired, use 1/2 teaspoon ground ginger, cinnamon or cardamom in place of lemon or orange rind. Honey may be used in place of the juice concentrate.

Directions to make Frozen Fruit Fantasy

Step 1:Soften gelatin in cold water for 2-3 minutes. Combine gelatin, lemon juice, fruit puree, grated rind or seasoning, fruit juice concentrate and yogurt and mix thoroughly. Freeze until crystals begin to form around the edges.
Step 2:About 30 minutes before serving, remove from freezer to refrigerator to allow dessert to soften. Scoop into stemmed dessert dishes for a festive presentation.
