Man Sized Omelet with Salsa - This very flexible, jumbo egg omelet has an abundance of “extra’s” added to it, creating a real “flavor fiesta” for your tastebuds! Ingredients to make Man Sized Omelet with Salsa
4 lg Eggs
2 tb Water
1 tb Unsalted butter
3 Slices of lean bacon, cooked, crumbled
1 sm Avocado, preferably California, peeled, diced
1/2 c Coarsely grated Monterey Jack (about 2 oz)
SALSA:
2/3 c Tomato Finely chopped seeded
2 tb Finely chopped red onion
1 Pickled or fresh jalapeno pepper, seeded, minced**
2 tb Minced fresh coriander (cilantro)
1 tb Fresh lime or lemon juice
** It is recommended you wear rubber gloves while handling the jalapeno pepper, or be sur to wash hands thoroughly, when done handling pepper, before touching anything else.
