Review This Recipe| Mushroom Soup with Barley - This fragrant, slow simmered, easy, mushroom barley soup recipe is very full-bodied, as well as very satisfying. We used colorful, fresh chunks of veggies, in a vegetarian, slightly flavored broth, as the base for the healthy barley, and simmered it until the barley is “melt in your mouth” tender.
