  Country Chicken Salad - A scrumptious, no cook, chicken salad, that makes us think of a hearty farmhouse meal. Extremely filling, absolutely delicious, it has the country goodness of fresh, colorful veggies, and the healthiness of barley. Have a slice of warm, homemade bread, and enjoy this divine meal outdoors when possible.

Prep Time: 20 mins
Cook Time: 8-10 mins
Main Ingredient: Chicken, Barley
Difficulty Level: 1

Ingredients to make Country Chicken Salad

2 c Water
2/3 c Barley; uncooked, quick-cooking barley
2 c Chicken; diced cooked
1/2 c Celery; diced
1/2 c Tomatoes; chopped
1/2 c Red onion; chopped
2 tb Lemon juice; fresh
1 tb Dijon mustard;
5 Lettuce; leaves

Directions to make Country Chicken Salad

Step 1:Bring water to a vigorous boil in a medium saucepan over high heat. Stir in barley; return to a boil. Reduce heat, cover, and simmer 8-10 minutes or until barley is tender, stirring occasionally. Drain; cool.
Step 2:Toss barley with remaining ingredients excpt lettuce. Serve on lettuce leaves.
